You just purchased authentic, high-phenolic Greek olives from Astakos. They are firm, buttery, and perfectly cured. But the moment you open the packaging, the clock starts ticking. Proper storage is the difference between an olive that stays crisp for months and one that becomes soft and metallic in weeks.
Do You Need to Refrigerate Olives After Opening?
How should you store open olives? Yes, once opened, naturally cured olives should always be stored in the refrigerator. To keep them fresh for up to 6 months, they must remain completely submerged in their original brine or a light coating of Extra Virgin Olive Oil (EVOO). If left at room temperature or exposed to air, the olives will oxidize and quickly lose their firm texture.

Keep Them Submerged
Air is the enemy of a cured olive. Whether in brine or olive oil, ensure the liquid fully covers the top layer of olives. If your brine runs low, you can top it off with a mixture of water, a pinch of sea salt, and a splash of red wine vinegar.

Use Clean Utensils Only
Never use your fingers or a dirty fork to fish an olive out of the jar. Introducing outside bacteria into the brine will disrupt the natural lactic acid environment, causing a cloudy film to form and spoiling the batch.

Watch the Temperature
Store them in the main compartment of your fridge (around 4°C / 39°F). Avoid the fridge door, as constant temperature fluctuations can degrade the polyphenols over time.
